Caroline Morse

Caroline is a graduate of Boise public schools and the University of Idaho, where she earned a bachelor’s degree in nutrition. She began her dietetic career working at St. Luke’s Regional Medical Center as a clinical dietitian and Certified Diabetes Educator. She then found her niche in school food service assisting in the supervision of the Boise School Food Service for the next sixteen years. She was very involved in planning menus, writing and evaluating production sheets, analyzing menus for nutrient content, supervising school food service personnel, processing free and reduced-price meal applications, and marketing school meals to students, administration, faculty, and patrons.
In October of 2008, Caroline was given the opportunity to join the Idaho Dairy Council as the School Marketing Director. It has been a chance to apply her many years of school food service experience in representing the Idaho Dairy Farm Families. Her focus is to encourage and increase dairy consumption and thus contribute to the nutritional well being of students in Idaho by working with the state’s many dedicated school food service professionals.
Her hobbies include camping and hiking in Idaho’s great outdoors and keeping up with the busy activities of her two children.
