Functional Foods: An Overview
Introduction

Consumer interest in foods containing components that may enhance health beyond their nutritional value is at an all-time high (1-4a,5). Many new so-called functional foods (designer foods and sometimes considered as nutraceuticals) are being developed and marketed to consumers to deliver specific health benefits such as reducing risk of coronary heart disease or boosting the immune system. Functional components (e.g., calcium, conjugated linoleic acid, sphingolipids, probiotic cultures) found in many traditional dairy foods continue to be identified, and new food products are being designed to enhance or include these beneficial components.

This Digest reviews the definition, growth, and potential health benefits of functional foods, as well as challenges related to marketing these foods. One of the most promising areas for the development of functional foods, particularly dairy foods, is the use of probiotic cultures. The health benefits of probiotics and the future of functional foods are also discussed.
