As a result of strict government regulations and dairy farmers’ commitment to providing quality milk, the public can be assured that all pasteurized milk and milk products are wholesome, nutritious, and safe. Today, a wide variety of milks (e.g., low-fat, fat-free, flavored, lactose-free) and other dairy products (e.g., cheese, yogurt), either conventionally produced or organically produced, are available to meet consumers’ different lifestyles and personal preferences. These options also make it easier for the public to meet the 2005 Dietary Guidelines’ recommendation to consume 3 servings of milk, cheese, or yogurt a day (45).
