Ingredients
  • 2 tablespoons canola oil
  • 1 cup yellow onion, cut into strips
  • 1 1/2 cups zucchini, diagonal-sliced
  • 1 1/2 cups yellow squash, diagonal-sliced
  • 1 1/2 cups red bell pepper, cut into strips
  • 1 (6 oz.) package fully cooked seasoned steak strips, defrosted
  • 1 1/4 cups Southwestern style shredded cheese, seasoned according to package directions
  • Fajita-size flour tortillas, warm (optional)
  • Southwestern style shredded cheese, seasoned according to package directions (optional)
  • Chunky salsa, (optional)
  • Reduced-fat sour cream

Heat oil in skillet over medium-low heat. Add onions and stir-fry for 2 minutes. Add zucchini, squash and bell pepper. Stir-fry over medium-low heat until tender-crisp. Add steak strips and stir-fry until fully heated. Remove from heat. Top with 1 1/4 cups seasoned cheese; cover and let stand until cheese melts. Serve with flour tortillas, remaining seasoned cheese, salsa, and reduced-fat sour cream if desired.
