Shrimp and Spinach Pita Pizza

Ingredients
  • 1/2 teaspoon olive oil
  • 1/4 cup thinly sliced red onion
  • 3 cups chopped fresh spinach
  • 1/4 teaspoon dried oregano
  • 1 cup (4 ounces) Sargento® Light Mozzarella Shredded Cheese, divided
  • 2 (6-inch) pita breads
  • 2 plum tomatoes, sliced
  • 10 large shrimp, cooked and peeled

Heat oil in small skillet over medium heat. Cook onion 1 minute. Add spinach and oregano; cook 1 minute or until spinach is wilted. Sprinkle 1/4 cup cheese on each piece of pita bread. Top with spinach mixture, tomatoes, shrimp and remaining cheese.

Place pitas on baking sheet; bake in preheated 400 degrees Fahrenheit oven 10 minutes or until cheese is melted.

This recipe is a good source of calcium.
